Blueberry Crumb Bars

These were fabulous. I didn't have any fresh blueberries, so I just used frozen and they were still divine.
Blueberry Crumb Bars

From: AllRecipes

1 cup white sugar
1 tsp. baking powder
3 cups flour
1 cup cold butter
1 egg
1/4 tsp. salt
zest and juice of one lemon
4 cups fresh or frozen blueberries
1/2 cup white sugar
4 tsp. cornstarch

Preheat oven to 375 degrees. Grease a 9x 13 pan.

In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and zest. Using a pastry cutter, blend in the butter and egg. Dough will be crumbly. Pat half of dough into the bottom of your prepared pan.

In another bowl, stir together the sugar, cornstach and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer. Bake for 45 minutes, or until top is slightly brown.

how do stay so thin? haha, you make soooo much dessert! my hubby would be in sweet tooth heaven, i however would be in gestational diabetes heaven:)

I tried these with frozen blackberries...ah, heaven.
